About

Ortolan Rosolio is a modern expression of the historic rosolios of Italy and in the tradition of French apéritifs and Italian amaros. We make it from heirloom roses sourced sustainably in California, and balance it with select botanicals for complexity and length.

 

Each variety of rose lends its own aroma, flavor, and color to the blend, and the final expression brings a refreshing garden into your glass. The result is a versatile and inimitable liqueur that changes color with the addition of citrus due to the natural pigments in the roses.

 

Our unique recipe and careful sourcing make Ortolan an essential ingredient for bartenders and home mixologists. Pair it boldly with your favorite spirit and some citrus for a simple drink, serve it chilled on its own, or refresh by having it with club soda and lime. Try elevating classic cocktails like the kir royale, margarita, negroni, spritz, and martini.

Sourcing

Our secret is in the sourcing. ​ We harvest more than 20 different varieties of heirloom garden roses to create an expansive blend of scents and flavors. ​ Most other rose products are made from a single type of rose, the damask rose, or its derivatives and have a singular and “typical” rose effect. ​

 

The roses are harvested by hand and treated carefully throughout the production process. We source roses from farms in California that are committed to sustainability and the well-being of their workers. ​ We help them minimize waste and increase the productivity of their farm by using roses that they don’t sell to the floral trade. ​ This helps to make them more competitive against conventional rose farms that tend to use harmful pesticides and grow varieties based on production rather than beauty.

We are proud to partner with our farmers to help them in their efforts to grow, preserve, and share the beauty of their roses… and to share that in Ortolan Rosolio.

Rosolio

Rosolio is a class of Italian liqueur that is most easily described as a “non-bitter” amaro, popular throughout the 1800s yet largely forgotten today. It has a versatile application and can be enjoyed as an apéritif and post-prandial. Ortolan Rosolio hearkens back to this tradition of luxury, for modern times.

How to (Cocktails and Such)

Ortolan Rosolio is a versatile ingredient in any cocktail. ​ Pair it simply and boldly.

Add bubbles to release perfumes. ​ Add citrus and watch it reveal its magic. ​

Ortolan and Soda

Ingredients

1 ½ oz Ortolan Rosolio

4 ½ oz Soda Water

Generous Lime Wedge

GLASSWARE

Highball or wine glass

PREP

Combine ingredients in glass, over ice; add lime wedge or serve on rim and instruct patron to squeeze and add to elicit color change.

Optional Garnish

Mint Leaf/Sprig

Ingredients

¾ oz Ortolan Rosolio

4 oz Extra Brut/Non-Dosage Champagne

GLASSWARE

Champagne flute

PREP

Pour champagne into flute, add Ortolan Rosolio (preferably in front of the customer to elicit color change).

Guns n Roses

Ingredients

1 oz Ortolan Rosolio

1 oz Mezcal

½ oz Freshly Pressed Lime Juice

1 bar spoon Agave Syrup

GLASSWARE

Low ball (rocks) or coupe (up)

PREP

Combine ingredients in a shaker with ice, shake, strain, serve up or on the rocks. Alternatively, combine all ingredients except for Ortolan Rosolio with ice in shaker, shake, strain into a glass up or on the rocks, and add Ortolan Rosolio to create color change and pink float.

Optional Garnish

Lime Wheel or Wedge, Rose Petal

Hemingway Ortolan

(nod to the Hemingway Daiquiri)

Ingredients

1 oz Ortolan Rosolio

1 oz White Rum

½ oz Grapefruit Juice

½ oz Lime Juice

1 bar spoon Agave Syrup

GLASSWARE

Coupe or Nick and Nora

PREP

Combine all the ingredients with ice in a cocktail shaker. Shake, strain into glass.

Optional Garnish

Grapefruit Triangle, Lime Wheel, or Mint Leaf

The Last Ortolan

(a take on The Last Word)

Ingredients

1 oz Ortolan Rosolio

1 oz Gin

½ oz Luxardo Maraschino Liqueur

1 oz Lime Juice

1 bar spoon Agave Syrup

GLASSWARE

Coupe or Nick and Nora

PREP

Combine all ingredients in a cocktail shaker filled with ice, shake twice, double strain into a chilled coupe glass and serve.

Optional Garnish
